Grilled Meatballs

Description

We really like the flavor or grilled and BBQ'd foods. So when I was wanting to do meatballs, of course they had to be grilled. This recipe makes great meatballs!

Ingredients

  • 1 1⁄2 lb Ground Beef
  • 1 c Panko (Japanese bread crumbs)
  • 1 onion, medium, chopped fine
  • 4 clv garlic, crushed and minced
  • 1⁄2 t crushed red pepper flakes
  • 1⁄2 t lemon zest, finely grated
  • 1⁄4 c Flat-Leaf Parsley, chopped, fresh
  • 1⁄4 c Pecorino Romano cheese, finely grated
  • salt, to taste
  • pepper, to taste

Instructions

Combine all ingredients and roll into balls about 1 1/2 inches in diameter. Taking a bamboo skewer, slowly insert the skewer into 3 meatballs per skewer, flatten slightly. Sprinkle lightly with salt and pepper. Cook over a high heat grill for about 10 minutes, turning frequently
